My husband decided to have a garden this year after a relatively successful run last year. The kicker is this garden is HUGE! More than double the size of the garden he tended last summer. Needless to say, we have tons of veggies and I have desparately been trying to uncover new recipes that allow me to use the produce and are unique. A girl can only eat so much sauteed zuchinni and squash…boring…(snore). So, I was searching through some sites and found a recipe for a Chicken Potato Skillet. I adapted it to our tastes (or really my hubby’s since he’s waaaaayyyy pickier than I am!) and it turned out pretty well!
3-4 slices of bacon
3-4 red potatoes, peeled and cubed
3 chicken breasts, diced
Shredded cheddar and mozzerella cheese
One dieced green pepper
One diced onion
One clove garlic, chopped
Salt and Pepper
Cajun seasoning (or season of choice)
Begin by cooking bacon either in the oven or microwave, let sit. Next, place the cubed potatoes in a pot and boil until soft. While the potatoes are boiling, saute the chicken until cooked through. When chicken is almost done cooking, add the green pepper, onion, and garlic to the pan.
Continue to cook until veggies are soft and chicken is completely cooked. Then add the drained, cooked potatoes to the pan.
Mix together and add salt, pepper and cajun seasoning to taste. Once the seasoning is added, top the chicken mixture with the shredded cheese and crumbled bacon. Allow the cheese to melt and serve hot.
You can also garnish with sour cream and green onions! Yummo!
