Red Velvet Cake Cookies

Who doesn’t love cake? And cookies? When we can combine the two into a hybrid invention, what could be better? This recipe could be adapted into many different flavors. Really, any cake flavor that you can buy in a box. How easy!!



1 box of red velvet cake mix

2 eggs

1/2 cup vegetable oil

2 Tbs. flour


4 oz. softened cream cheese

2 tbs. softened butter

1/2 tsp. vanilla

1/2 tsp.  milk

2 cups powdered sugar


Begin by mixing the dry cake mix, eggs, oil, and flour in large mixing bowl until combined. Spoon the mix in 1-2 inch balls onto baking sheet (use either a baking mat or lined cookie sheet). Bake at 350 for 9-11 minutes or until the cookies have a crackled look on top. Let cool.

While cookies are cooling, cream the cream cheese and butter in a bowl. Add in the milk and vanilla. Then, slowly mix in the powdered sugar. If the mix is a little runny, add in more powdered sugar until you reach desired consistency. Let sit.

Once cookies have cooled, drizzle icing on top of cookies. To make it easier, put icing in a ziploc bag and cut a small hole in the bottom corner, creating an easy way to dispense the icing onto the cookie. Let the cookies sit for a while to enable icing to harden slightly.
